Almond Meal & Coconut Milk Porridge
3 macadamia nuts (ﬁnely chopped) 1⁄2 tsp sesame seeds
1⁄4 tsp ground nutmeg
1⁄4 tsp ground cinnamon Pinch of salt
1 tbs blueberries
(fresh or frozen)
1⁄4 cup almond meal 1⁄4 cup coconut milk
15 Minutes Total Time
- To make the topping: Combine the almonds, macadamia nuts, sesame seeds, nutmeg, cinnamon and salt in a small bowl. Topping mix can be pre-mixed and stored in the cupboard. Just before serving, add blueberries and mix together and set aside.
- To make the porridge: Heat the almond meal and coconut milk in a small saucepan over medium heat. Slowly bring to the boil, stirring continuously. Boil for 1 minute, then reduce heat and simmer for another 2 minutes adding more coconut milk as needed. Serve with the topping.
